And when it comes to tapas, you can stick to the classics or be more adventurous. Be daring with this original recipe that fuses sweet and savoury. A dish that is (not only) a feast for the eyes.

  • 320 g Mola Halal Turkey Cold Meats
  • 2 balls of fresh mozzarella
  • 400 g quince paste
  • 100 ml Modena vinegar
  • 3 tablespoons of raspberries
  • 1 tablespoon of sugar
  • lamb's lettuce.

Preparation

  1. In a saucepan, boil the raspberries with the vinegar over medium heat until you obtain a fuller-bodied liquid, almost like liquid caramel when cooled.
  2. Blend and strain while still hot. Keep refrigerated.
  3. Cut the mozzarella into discs. Slice the quince paste and the Mola Halal Turkey Cold Meats.
  4. Finished dish. Arrange layers of quince, turkey sausage and mozzarella on each plate, alternating the ingredients. Serve with a little raspberry glaze, lamb's lettuce and some extra raspberries.
