Tomatoes stuffed with vegetables, rice and chicken sausage

Be careful because if you surprise your guests with a recipe like this every time they visit, they might never leave. Perfect for the summer season, you can never go wrong with this balanced and fresh dish. Enjoy it on your terrace or in your garden if you get a chance. It tastes better outdoors!

Ingredients

  • 1 kg pear tomatoes
  • 200 g Mola Halal Chicken Cold Meats
  • 300 g cooked rice
  • 1 carrot
  • 1 courgette
  • 1 spring onion
  • 1 bunch of asparagus
  • 1 jar of mayonnaise
  • olive oil
  • salt
  • fresh chives.

Preparation

  1. Wash the tomatoes and cut off the bottoms to sit them in place.
  2. Also cut off the tops (put 1 tomato aside).
  3. Scoop them out, sprinkle with salt and leave them to drain the water off on to a tray.
  4. Meanwhile, peel the asparagus and carrot, and cut them into cubes.
  5. Do the same with the courgette, but without peeling it, and cook everything al dente (cooked, but crunchy).
  6. Chop the spring onion and peel the tomato you left to one side.
  7. Remove the seeds and cut into cubes.
  8. Mix all the ingredients in a bowl and add the mayonnaise, rice and half of the Mola Halal Chicken Cold Meats cut into strips.
  9. Add salt to taste.
  10. Finished dish. Sauté the remaining Mola Halal Chicken Cold Meats cut into thin julienne strips in a frying pan with a little oil, until golden. Fill the tomatoes with the mixture from the bowl, top with the sautéed ham and decorate with fresh chives.
